Coconut Barfi:
It is prepared using grated coconut along with jaggery powder, cardamom and jaggery powder. The first step is to place the pan on the stove and cook the coconut powder. Then, cook on low heat for about 5-10 minutes. Then take it down and sprinkle cardamom powder in it. Keep it in a separate container.. Put some hot water in a bowl and then add jaggery to it. Place on the stove to cook. After it thickens, sprinkle grated coconut in the mix and after it cools down completely, cut it like a barfi. Delicious tasting sweets are made like this.

To prepare this, first boil the milk and keep it aside. Then wash the rice well and grind it finely. Soak saffron in one spoon of milk. Take out the pistachios and cut them into small pieces. Then turn on the stove and add milk. When it boils, add in the rice mixture and continue stirring. Add cardamom powder, and saffron milk. If the mixture starts to thicken, reduce the amount. Refrigerate for a few days before serving.
